Chinese Chicken Salad

-Pour salad oil in pan about 3: deep.
-Heat to 375-400 degrees.
-Break Maifun (rice noodles) into small portions about 3" long.
-Place some of the noodles into the hot oil - it will puff up right away.
-Turn noodles over so that they all cook.
-Remove noodles as soon as it stops crackilng and place on paper towel to drain.

-Dressing
-Combine
-1/2 tsp dry mustard
-2 tbsp soy sauce
-1 tbsp sesame oil
-1/4 cup salad oil
-4 tbsp Rice Vinegar (Marukan brand is good)

- Shake well

-Shred lettuce into salad bowl mix with shredded chicken and top with fried rice noodles. Pour dressing over mixture and mix gently.
Eat and enjoy!
